Mike Proctor keeps it simple with his Comfort Food submission:
“This is the chili that I grew up with. Note that the recipe does not call for beans (that would be chili and beans) or onions or tomatoes. This is just old-fashioned chili.
Ingredients:
2 lbs. of meat of choice
According to taste preferences add:
2 packets of New Mexico chili powder
2 hand cups of Comino seeds
2 hand cups of whole oregano
6-10 diced garlic cloves
Directions:
Sauté meat until done
Drain meat
Add other ingredients
Add hot water to cover
Simmer for four hours, stirring occasionally
Serve over rice or eat with tortillas
